Self-Care Summer: Day 1/100
I always welcome the stillness and the slowness of a Sunday. Workouts aren’t my idea of a good Sunday reset but in the spirit of getting out more (and getting the most out of my membership) I decided to do the Control 2.0 class. It was such a good workout and so many of the weekday regulars were there.
I may (or may not) be adding this to my Sunday afternoon routine.
On the podcast I talked about offering these charcuterie/crudité bento boxes to keep everyone from grazing on hot cheetos all Summer. Everyone gets to build their own box. Our goal is to eat one of these each day. You can eat it as a meal or whenever you feel like you need a snack. They get some extra fruits and veggies in and I don’t have nutrition-guilt.
A win.
I still can’t believe I’m growing food.
There are so many tomatoes and bell peppers in my future. All of my peaches are gone. We were able to harvest and enjoy six of them. Garden checks have become one of my favorite things to do.
After counting all of my produce and watching my husband pull weeds I figured it was time to cook dinner. Since I enjoy cooking it only feels like a chore when I’m pressed for time or exhausted. Today I wanted to make something I new would be quick and easy.
Homemade “beefaroni” is a one pot meal that is always a hit with everyone that lives here. I like it because there are normally leftovers for lunch the next day for them. A little garlic, shallot and mushrooms that I make look like meatballs make this so yummy and filling. Italian sausage and a good quality tomato sauce carry this dish. I shred parmesan cheese on the top before serving.
Yum.
After dinner I took a shower and started binge watching “The Chi”. I don’t think I’ll finish it. The storyline is good but I feel like it’s a show I’ve seen before. It’s not holding my interest.
