Kale and Chicken Salad

This kale and chicken salad is a protein packed easy meal idea that uses leftover roasted chicken. I almost ordered takeout for lunch but I decided to shop my kitchen to see if there were enough ingredients to make something. Anything.

This kale and chicken salad was made using roasted chicken, pistachios, feta cheese and English cucumbers. I also tossed in leftover bacon from breakfast that morning. It was very filling and I felt full until dinner time.

Normally I would’ve added a boiled egg and some tomato but lately I have been practicing restraint with overloading my salad bowls. It also saved me time because I didn’t have to wait for the egg to boil. These flavors worked really well together. For the dressing I combined a greek vinaigrette with a little creamy poppyseed for the most delicious savory sweet concoction.

I have also been paying more attention to how much dressing I use. One habit that I am putting into place is removing the salad dressing bottles from the table. When the bottles are absent from the table I am less likely to keep adding little drizzles of dressing here and there. All of those pours add up and I can eliminate extra calories by tossing my salad and putting the bottles back in the fridge before sitting down to eat.

I have been eating meals like this for years and I am still surprised at how long they keep you full. Sometimes I’ll have to make myself eat a small dinner because these salads are so satisfying. Before ordering takeout for lunch I shop my fridge to make sure that there’s absolutely nothing there. Implementing this small change has saved me time and money. Using leftovers to create new meals can be so helpful. You might even discover a new meal that you’ll love.

One of the easiest ways to eat well consistently is to always have ingredients in your pantry or fridge that you like. Put those ingredients on top of whatever leafy green you may have for a quick and easy meal. Being open minded about food has helped me tremendously. I may not always eat the things I crave but I still end up eating some really delicious meals. This is where consistency lives.
