Broccoli & Black Bean Tacos

You want to talk about an easy dinner? When it’s Taco Tuesday and you don’t want to eat what everyone else is eating because you’re trying to cling to that meat-free life as much as you can…insert these extremely easy broccoli and black bean tacos. They is yummy. They is fast. They is healthy. You can always omit the sour cream if you aren’t doing dairy.

Let’s get into these tacos.

Do not tempt me with a good time or a good taco because I’ll take you up on both. I am always searching for new meal ideas by using things that I already have at home. This broccoli was probably going to end up in a hefty bag at the end of the week because it wasn’t a part of my meal plan.

This broccoli was supposed to be used for something else. I remixed it for this and I am so glad I did.

In no time at all I had these delicious broccoli and black bean tacos. I use the La Preferida Black Beans. They are creamy and filled with so much flavor. These beans also make the perfect dip when you need a little chip n’ dip action.

A little smear for the taco is all you need. Pair it with a little sour cream and top it all off with Pace Picante Chunky Salsa and you’re done.

A note from Tia’s Table:

I only eat sour cream when I have tacos. Other than that, I rarely ever have dairy. I use oat milk in my coffee and I might have ice cream a couple times a year.

I also strongly believe in making your own salsa but whenever I get store bought I always go with Pace. I have tried other brands and they just don’t do it for me. It’s basic but it’s good, lol. You can judge. I am an Aquarius so your judgement ends with you. 😂
