Sheet Pan Stir Fry Dinner

There is nothing I love more than a sheet pan dinner on a day when I’m cooking out of obligation. Sheet pan meals are quick, easy and the clean up is minimal. My kind of dinner. What makes this sheet pan meal special is that it marries two things we love. You get the stir fry veggies without all the stir fry stirring. Love that for us. A good combo of veggies and protein with a side of rice and we have another great dinner idea that involves hardly any cooking at all.

Now. I know what you’re thinking. This photo isn’t giving stir fry. I agree, it doesn’t. That’s because I prefer to omit the sauce from my stir fry. You can totally use it if that’s your jam or if your family likes it. If I find that I am in the mood for that hibachi flavor I throw on a couple splashes of something in my bowl. I keep the veggies sauce free because it helps me remix them for another meal later in the week. You can always sauce in your bowl. Never forget that.

What makes this meal so easy is that we use the bagged stir fry veggies from the produce department. Give everything a good clean and thorough inspection before seasoning them. All you have to do is drizzle, season and spread it all out on a pan. Pop it in the oven and that’s it.

Do you see what I mean? So easy. Of course, we could totally make this in a wok or skillet but then you’d have to stand there flipping and stirring. And who has the time for that honestly? I mean, you might have the time but why would you want to spend it flipping and stirring when you could be sitting and waiting? It’s the built-in break for me.

This meal makes for a great lunch too. So little work and so many options. I don’t know about you but that sounds like a good dinner and an ideal way to go through life. 😆
