Couscous & Chickpea Kale Salad

This couscous and chickpea kale salad does not disappoint. It’s light. It’s healthy. It’s got a good greek flavor. And it will pair well with any protein.

I love it when friends share recipes with me. Those are the kind of DMs I love to get on Instagram. If it’s clean, easy and quick to make I want to see it. When a friend sent me a reel featuring a salad that Jennifer Aniston ate while filming Friends I instantly rolled my eyes because Friends ain’t nothing but a washed down Living Single. Once I got pass my feelings I thought about the flavors featured and the no-cook concept. I knew I could make it better. Tastier. And I did.

For this yummy bowl I use the garlic herb flavored couscous from Far East. It cooks in minutes and it practically cooks itself. I sauté the chickpeas after draining and rinsing them until they are tender. I give the English cucumber a rough chop while attempting to transform the kale into perfectly slender ribbons. I use minced garlic from the jar because who has the time to dirty up the tiny chopper. The pistachios are bought without the shell to speed things up. This should feel easy.

Little bits of walnut are tossed in before sprinkling everything with the feta cheese. Nothing enhances a salad like feta. I don’t eat a lot of cheese but when I do it’s normally in a salad like this. For me, the key to consistently eating well is pair strong flavors with healthy whole ingredients. As long as it tastes good I can eat something all week without getting tired of it. The cranberries add just the right amount of sweetness to cut through the savory. This one is delicious all the way around.

Trust me on this one. I know how people feel about lots of healthy sounding ingredients all in one bowl. I felt the same way when I saw the original recipe. Whenever you see a good idea for a meal remember to swap out the items that don’t speak to you. Make things work for your tastebuds. Keep the concept but make those flavors your own.
