Tofu & Broccoli Recipe
Just like most 80's babies I love a good remix. Give me the same lyrics over a new dope beat with a feature from an equally talented artist and you will get my streams every time. My love of remixes doesn't end with music. I love a good remix in the kitchen too. Today we're going to remix one of my favorite recipes by Ayesha Curry. Her black pepper steak is "I can't believe I made that in my own kitchen" good. Here's my remixed version adding in some healthy heavy hitters that marry well with her amazing sauce.
The first time I made this recipe I made it according to the recipe's ingredients and instructions. It was delicious. This meal will give your favorite takeout spot a run for its money. Easily.
Once dinner was over I knew I'd be making this meal again. Soon. I limit the amount of red meat that I eat so I needed to look for an easy swap for the steak. This wasn't a job for cauliflower. Cauliflower works overtime around here so I wanted to give her a break.
Insert her favorite cousin, broccoli. One of my favorite meals at my local Chinese restaurant is broccoli and tofu in brown sauce. This is basically the same thing without the delivery tip.
The first thing you'll want to do is get your tofu nice and crispy by cooking it in your favorite oil. I use canola oil like Ayesha but you use whatever speaks to your heart.
Once the tofu is done toss the onions and mushrooms in that same skillet. You can also go ahead and drop your broccoli into a pot of boiling water.
When the onions are translucent and the mushrooms are cooked through add the broccoli to the skillet. This process should only take a couple minutes.
Add the sauce and cook it until the sauce gets thick. You can serve this over white rice, brown rice, cauliflower rice (this might be a little mushy though - don't say I didn't warn you...) or my personal favorite, quinoa.
