No Crumbs Left Grilled Salad Review

I love it when an Instagram recipe tastes as good as it looks. This grilled veggie salad by No Crumbs Left was perfect for a Sunday dinner. This salad grills quickly alongside your favorite proteins for a quick easy dinner. The pistachio pesto featured in this recipe is an unsung hero. It’s so good you could eat it as a dip. The pesto does this incredible dance with the balsamic feta dressing that’s included in the recipe. Delicious. There were absolutely no crumbs left.

No Crumbs Left Grilled Veggie Salad

What I loved most about this salad is that it included potatoes but it wasn't a potato salad. Not hating on the potato salad because there is definitely a time and place for her. This salad is like her classier cousin. The grilled peppers and the marinated onions are not to be skipped. It’s just like Bey’s new album. Don’t skip the greatness or it just won’t hit the same.

The marinated onions will require some planning as they need to sit for about 12 hours to reach their full potential. Me and these onions have that in common. Cook your potatoes ahead of time. I cooked them early to give them a chance to return to room temp before taking them to the grill.

The flavors here really give Mediterranean meets comfort food. The lemon juice, fresh basil, chives and parsley work well together with kosher salt. You will want to make this over and over again. A veggie loaded salad that holds its weight next to anything you’re grilling? Yes, please.

I enjoyed my salad with salmon that I seasoned with lemon juice and a random seafood spice mix I found at Kroger. So good. My husband had his salad with a steak and he was very impressed with the flavors. He even took some for lunch the next day. Groundbreaking results.

The next morning I topped two eggs with some of the veggies from the grilled veggie salad for a quick breakfast. You know we don’t waste meals around here, we remix them.
