VEGETARIAN & VEGAN VIBES DAY 4


Are dying to have a piece of meat yet? Me either. I've noticed a few changes already and we're only on day 4 of the challenge. 

Here's what I'm liking about the plant based life so far...


That metabolism tho...

In just four days I have already seen a kick in my metabolism. I don't know how long it will stay this way but my system is moving in a way it hasn't since I was a teenager.

Faster cooking times. Less time in the kitchen...

My meals are coming together in 30 minutes or less. Every night. I can't even begin to tell you how great it's been spending less time in the kitchen every evening.

Money saver...

I was able to save money this month on our grocery bill not buying meat.

Those would be my top 3 takeaways from this experience so far. Some things that haven't been so great? I notice that I'm not as full after meals. I have developed a desire to have a snack or mini meal after meals. So unlike me. 

Anyway. Tonight I made the Moroccan Couscous. Here are my thoughts about the recipe...



This was absolutely delicious. I put a twist on the flavor component and it turned out great. I'd highly recommend this recipe to anyone. It would be great as a cold salad too.



This meal was fast and easy. It was done in less than 15 minutes. It doesn't get much better than that.



I'll be keeping this one in rotation. The fam liked it too so it was definitely win-win.
