WHAT TO EAT: JULY 2017

fitness motivation

A new month of meals is upon us! This month I am challenging myself, my family and you to incorporate some vegetarian and vegan meals into your meal plan. I just want to feel good from the inside out. Here's how and what we'll be eating during the month of July.

This month I really wanted to take our clean eating to the next level by introducing some meatless meals. It's so hard coming up with a menu to suit the wants and needs of five people and trying to shift to a new way of eating.

My goal is to eventually get us to a place where the majority of our meals are plant based. My husband has "kind of" co-signed on this new way of eating. One day he's all for it and the next day he's asking about when he'll get to eat meat. We'll see how things go with him.

I'm hoping the kids will take to eating less meat okay. Based on the menu this month the majority of our Mondays, Wednesdays and Fridays will be meatless. I tried to do seafood on Saturdays and keep"Taco Tuesdays" in there for Savannah. She loves a Taco Tuesday and eyes roll when it's not a fiesta in here on a Tuesday.

Not gonna lie, it takes quite a bit of time to create these menus. My kids are always hovering over my lap trying to see what's filling these little squares. The baby isn't too bad about it yet but he follows those other two around so he ends up pointing and screaming at the screen with them.

If you find these to be helpful please drop me a comment or share the link to the post on social media! You can also pin the pic of the menu to pinterest. Here's a PDF version with links to some the recipes.

If you've never tried meal planning like this give it a try. It does take time but you can see all your meals (and possible lunches) for the whole month at one time. Don't feel like you have to do all of your shopping at once. I only do that because we only get paid once a month around here and I like getting all of my frozen and non-perishable items all at once. Also - I'm crazy so there's that too.

If you have any questions about this don't hesitate to reach out to me. I'm pretty good about getting back to my messages. 😉

Oh. And Chrissy Tiegen's cookbook can be found in my Amazon store. Just click on 'shop' at the top of this page.
